Holy Crepe – it’s Pancake Day next week
Not sure you want reminding but Pancake Day has crept up on us – it’s next week, Tue 28 Feb – the one day of the year when it’s totally acceptable to throw food round the kitchen. For 24 hours us amateur chefs will be stocking up on eggs, flour, Nutella, bananas and lemons to entertain our friends and family. I’m no masterchef – don’t take my advice for gawd’s sake unless you’re after a gloopy mess – I’ve enlisted the help of crepe chef connoisseur John Fenton from Cambridge Crepes to share his flippin’ good recipe plus a few tips on how and when…
- 250 grams plain flour
- 4 eggs
- 250 mls semi-skimmed milk
- 230 mls water
- half teaspoon salt
- 4 tbsp of melted butter
Whisk together the eggs and plain flour. Slowly add the milk and water, whisking all the time (you can use an electric food whisk for speed). Continue until the mixture is smooth – not too runny and not too thick. It might not be necessary to add all the liquid so go gently and check the consistency of the mix throughout – if it’s getting too thick just add a tiny bit more milk. When the mixture is well combined finally add the butter and salt.
The fun part
We’re ready to get flippin’ – coat your largest non-stick frying pan thoroughly with a light coating of olive oil and warm on a medium heat. Ladle enough mix into the pan whilst tilting in a circular motion to thinly cover the surface with the batter. Keep checking the underneath of the crepe and when golden brown three, two one – flip! Playing safe, then use a spatula to toss it onto the other side but that is kind of missing out on the fun – embrace the day and go for a two-handed confident air born toss. Whether you go sweet or savoury – cover with your favourite toppings, roll, fold and scoff!
John, what are your favourite toppings?
Well it’s hard to choose – for my favourite sweet crepe it’s a toss up beween Nutella, banana and biscuits or strawberry, banana and white chocolate. My savoury choices are egg, cheese, bacon and onion or alternatively brie, chicken and cranberry.
